Chocolate Almond Squares

Today’s latest raw vegan treat to please your sweet tooth are these Chocolate Almond Squares. The perfect cross between crunchy and smooth with all these layers, there’s something for everyone to enjoy!

Ingredients:

BASE-

  • 80 g Oat Flour
  • 50 g Medjool Dates
  • 2 Tbsps Cacao Powder
  • 2 Tbsps Coconut Oil (melted)
  • 1 Tbsp Maple Syrup
  • Pinch of Salt

CARAMEL ALMOND BUTTER LAYER-

  • 225 g Medjool Dates
  • 70 g Peanut Butter
  • 2 Tbsps Non-Dairy Milk
  • 2 Tbsps Coconut Oil
  • Pinch of Salt
  • 40 g Almonds, divided

CHOCOLATE LAYER-

  • 50 g Coconut Oil, Melted
  • 2 Tbsps Cacao Powder
  • 2 Tbsps Maple Syrup

COCONUT LAYER-

  • 100 g Desiccated Coconut
  • 2 Tbsps Coconut Oil
  • 1 Tbsp Maple Syrup

Method:

  1. Line a loaf tin with baking paper and place to one side for later.
  2. To make the chocolate base, pulse all the base ingredients together until the mixture resembles a smooth texture. Press the base mixture into the prepared loaf tin. Place this into the fridge whilst you prepare the caramel almond butter layer.
  3. To prepare the caramel layer, blend all ingredients together in a high-speed processor until smooth. Evenly spread the mixture over the top of the chocolate base and sprinkle half your divided almonds over the top.
  4. For the chocolate layer, in a small bowl, using a wooden spoon, mix all the ingredients together until smooth. Pour half of the chocolate mix over the top of the caramel almond butter layer and place the loaf tin into the freezer, for around 10-15 minutes, so the chocolate can harden.
  5. Whilst the chocolate is hardening, prepare the coconut layer by stirring all of the ingredients together in a small bowl.
  6. Once the chocolate has hardened, remove the tin from the freezer and spread the coconut layer over the top of the chocolate layer.
  7. Pour the remaining half of the chocolate over the top of the coconut layer and sprinkle the last of the divided almonds over the top.
  8. Place back into the freezer for another 10-15 minutes to allow the chocolate to harden.
  9. Once the bars are ready, remove from the freezer and slice into bars or squares!
