RAW MINCE PIES

Merry Christmas Everyone! Snow hasn’t fallen this year, but the flour certainly has, these fruity raw vegan mince pies are sure to go down a treat and a show stopper this Christmas. Filled with festive joy with cinnamon and mixed spice, your taste buds will be sent into overdrive.

Ingredients:

BASE- 

  • 150 g Oat Flour
  • 50 g Ground Almonds
  • 1 Tbsp Milled Flaxseed
  • Pinch of Salt
  • 4 Tbsp Coconut Oil

FILLING-

  • 65 g Raisins
  • 90 g Dates
  • 100 g Dried Apricots
  • 2 Tsp Mixed Spice
  • Pinch of Salt
  • 1 tsp Cinnamon
  • 1 Tbsp Milled Flaxseed
  • Zest of One Orange
  • Squeezed Juice of One Orange

Method:

  1. To make the base, blend all the ingredients together in a high-speed food processor until it resembles a crumbly dough. Place in the fridge to harden for around 15 minutes.
  2. Evenly split the base mixture into your small silicone holders and place into the freezer for around half an hour. Keep some to one-side to roll out and use to create stars to place on top of your pies.
  3. Blend all your filling ingredients together in a high-speed food processor until the texture of the mixture resembles some what of mincemeat.
  4. Once your mince pie cups are solid, remove from the freezer and evenly distribute your filling between them all, cut out your stars with the base mixture you kept to one side and place on top of your mini pies.
  5. Store in the fridge until you are ready to eat them!
