BREAKFAST GRANOLA CUPS

These granola cups are the perfect breakfast pick me up! Crunchy on the outside but soft and delicate in the middle. Need something small and sweet to cheer your morning up? We’ve found the perfect answer.

Ingredients:

GRANOLA CUPS:

  • 170 g Granola
  • 70 Sunflower Seeds
  • 40 g Maple Syrup
  • 50 g Peanut Butter

FILLING:

  • 50 g Peanut Butter
  • 50 g Coconut Oil
  • Strawberries

CHOCOLATE TOPPING:

  • 90 g Chocolate Chips

Method:

  1. Mix all the granola cup ingredients together in a large bowl until it is well combined. You should be able to pick it up and mould the mixture in your fingers.
  2. Press the mixture into the cupcake holder and leave a small indentation in the middle to put your filling in.
  3. Place in the freezer for around half an hour to allow your cups to harden.
  4. Melt your peanut butter and coconut oil over a low heat and wait until combined. Once your granola cups have hardened, pour the peanut butter mixture into the middle and chop some strawberries in half and press gently into the middle of your cup.
  5. Melt the chocolate chips over a bain-marie on a low heat, and once melted, pour the chocolate over the top of your filling and place into the fridge to set for around 1 hour. (TIP: if the chocolate is left in the fridge too long, then it will harden to much and when you cut it, it will crack!)
